This is where the science of packaging comes in, and it's something I'm very passionate about. A single layer of coating is not enough for a frozen product. The inside coating (PE or PLA) is essential. It prevents the ice cream's moisture from seeping into the paper fibers, which would make the tub weak. Just as important is the outside coating. When you take a tub out of the freezer, condensation forms on the outside. This outer coating prevents that moisture from turning the tub soft and soggy in the customer's hand. When combined with a well-fitted lid that creates a tight seal, this double-coated system is the best defense against freezer burn, which is caused by air getting to the product. It's a small detail that makes a huge difference in quality.
